We present an easy interpretation of a cocktail featured on our latest menu. Designed as a large-volume prepared mix which is bursting with essence associated with holiday season, making it perfect for your celebration. Any leftover citrus syrup to use in morning drinks, sweets, or for more rounds of this cocktail.

Yields 10 people
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Drink (produces 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
For the Cordial: Combine the listed items inside a pan, bring to a simmer, stirring until the sugar dissolves. Then, remove from the stove and leave to cool down fully. Decant into a sealable bottle, close it and refrigerate it in the fridge, where it will keep for around one month.
Preparing the Batch Mix: Mix the specified liquids in a large bottle, let it rest for one hour, then pass it through , ideally through a fine cloth, making it completely strained.
For serving: Measure 85ml of the batch mix to a stirring glass packed with ice, gently stirring gently for one minute until cold. Pour to a chilled martini glass or similar, top with the cranberries and finish with a brief mist of mandarin oil over the top.
